Fabulous meal at Miller and Carter - Mailbox

The new Miller and Carter steakhouse opened at the Mailbox in April and we just knew we had to go. I love my steaks and I certainly wasn't dissapointed!

We started off with their Sharing platter which really helped us out because it was way too difficult to choose which starter to have. The sharing platter had Creole prawns, buffalo chicken wings, garlic bread, cheddar mushrooms and a slice of Miller and Carters secret recipe onion loaf, served with chilli marmalade and BBQ dips

It was amazing! We really enjoyed it, unfortnately I haven't got a picture but it was yummy. The prawns and the mushrooms were my favourite. The Mushrooms had an amazing creamy sauce yumyum.

For my main course I had Sirloin Steak with their iceberg lettuce wedge drizzled with Caesar Dressing with Parmesan and Croutons, I think the picture sums up how awesome it was...


Their special recipe onion loaf was delicious and the steak was a-m-a-z-i-n-g my boyfriend had the Smoky Barbecue Chicken which he said was very good but he had major food envy and we both decided that when we go back again we will both be ordering steak!

Everyday Chocolate Brownies
Here's a yummy Brownie recipe from one of my newish cookbooks Kitchen by Nigella Lawson

I made these after seeing Nigella make them on her BBC2 show and they turned out great :)


Ingredients
150g unsalted butter
300g light brown muscovado sugar
75g unsweetened cocoa powder, sifted
150g plain flour
1 teaspoon bicarbonate of soda
Pinch salt
4 eggs
1 teaspoon vanilla extract
About 150g milk chocolate, chopped into small nuggety chunks
Icing sugar, to dust, optional

To bake use a 25cm square x 5cm deep foil-lined baking tin or 1 foil tray approx. 30 x 20 x 5cm


1) Preheat the oven to 190C/Gas mark 5. Melt the butter over a gentle heat in a medium-sized saucepan

2) When it's melted, add the sugar, stirring with a wooden spoon (still over a low heat) to help it blend with the melted butter.

3) Sift together the cocoa powder, flour, bicarb and pinch of salt, and then stir into the pan; when mixed (this will be a very dry mixture, and not wholly blended at this stage), remove from the heat.

4) In a bowl or jug, whisk the eggs with the vanilla extract and then mix into the brownie mixture in the pan.

5) Stir in the chopped chocolate and quickly pour and scrape into a foil-lined baking tin or disposable foil pan, spreading the mixture with a spatula, and cook in the preheated oven for about 20 to 25 minutes. It will look set, dark and dry on top, but when you feel the surface, you will sense it is still wibbly underneath and a cake tester will come out gungy. This is desirable.

6) Transfer the pan to a rack to cool a little before cutting into 16 pieces and dusting with confectioners' sugar.

*Make Ahead Note: The brownies can be made up to 3 days ahead and stored in airtight container. Will keep for total of 5 days.


*Freeze Note: The brownies can be frozen for up to 3 months in airtight container, layered with baking parchment. Thaw overnight in cool place.

For the chocolate I used yorkies and twirls to get lots of nommy chocolate flavour.
I enjoyed them warm but the day after baking these were even better! I also froze some and they didn't taste any less amazing after being defrosted :)

Hey guys! So this is my first post and im not sure what im actually doing but hopefully there should be a picture of some sparkly shortbread somewhere on here if I have managed to do it right!

I found these lovely cookie cutters in poundland and I couldn't resist getting them to make some lovely Easter shortbread :)

The recipe I used is below and it was very yummy!

The Ingredients:

225g Plain Flour
75g Caster Sugar
1 Vanilla Pod
150g Unsalted butter, at room temperature
Icing sugar - for dusting

1. Preheat the oven to 180C/Gas 4

2. Sift the flour into a large mixing bowl and add the caster sugar. Using a sharp knife, slit the vanilla pod open lengthways and scrape out the seeds with the tip of the knife. Add the seeds to the bowl along with the butter.

3. Using your fingertips, rub the butter into the dry ingredients. As the mixture begins to come together, use your hand to help it form a dough (alternatively, you could use an electric mixer with the paddle attachment on a low speed to make the dough).

4. Shape the dough into a ball and flatten it slightly. Roll out on a lightly floured surface to about 1cm thick.
Now you can either cut these into approx 15 oblongs or use a cookie cutter to make desired shapes and place them on a baking sheet lined with baking parchment.

5. Bake for 15 minutes, then turn the baking sheet and continue to bake for 10 minutes, until the shortbread is golden brown. Remove from the oven and leave on a baking tray to cool. When cooled use a tea strainer or sieve to dust the biscuits with icing sugar.



*I added some edible pink glitter to make them look even prettier!

*Cutting the biscuits into oblongs (or squares) will prevent wastage and unnecessary trimmings.
