Delicious buttermilk Pancakes!

Hope you are all having a nice week! Ive got a nice little recipe here for buttermilk pancakes which can be made for breakfast or an after dinner treat :)

I had mine with toffee syrup, sugar and banana and they were delicious!
You can add blueberries or anything you want but this is the basic recipe for a plain lot of pancakes:




Ingredients:

3 eggs
125ml buttermilk
50g butter , melted
5 drops vanilla extract
160g plain flour (sieve twice)
1 tbsp golden caster sugar
3/4 tsp baking powder


First of all beat the eggs and a pinch of salt until frothy. Add the buttermilk, melted butter and vanilla and beat well. Mix the flour with the sugar and the baking powder then sieve together and add the dry mixture to the liquid and quickly beat just enough to make a smooth batter.




I used cooking spray but you can also put a little oil on a piece of kitchen roll and rub over a heavy-based frying pan. Heat the pan (but not too hot). Pour in a couple of spoonfuls for little pancakes, more for bigger ones. I used an ice cream scoop to get the mixture into the pan.

You could now sprinkle a few blueberries over the top of each pancake. Cook gently for a couple of minutes until the pancake is looking golden brown around the edges. Flip and cook for a further minute or so. Be careful when you lift them out. You may need to rub the pan with a little more oil between each batch. Serve with anything you fancy!
